This riff on the classic Negroni comes from Kendall at The Butler in Potts Point, first poured at our TANICA trade launch in April 2024. It was there we realised just how deliciously daytime TANICA tastes in a Negroni.
At 17% ABV, TANICA can be swapped in for Campari (25% ABV) to create a version that’s less bitter, less boozy and far more sessionable. The native Davidson’s plum brings a subtle fruity lift, while a citrus-forward gin and a classic, rosé or dry vermouth keep things bright and balanced. Add a dash of bitters if you must — but we think this version is lighter, tastier and effortlessly drinkable as is.
Fun fact: instead of the traditional orange garnish, a lemon twist works better here — the citric acid cuts through the sweetness and lifts the whole drink.
Ingredients
1 part TANICA
1 part Australian citrus gin
1 part classic, rosé or dry vermouth
Lemon twist, to garnish
Method
Add all ingredients to a mixing glass with ice.
Stir until chilled and well diluted.
Strain into a rocks glass over fresh ice.
Garnish with a lemon twist.
