This cocktail was created by Johann from The Basin Dining Room in Mona Vale, as a fresh, local riff on the classic French 75.
Swapping in TANICA for part of the spirit base adds a brighter, fruit-forward edge that feels lighter, juicier and perfect for daytime drinking.
Fun fact: the French 75 was named after the 75mm field gun (howitzer) used by the French army in WWI, said to hit with the same kick as the cocktail. This version keeps the sparkle, but softens the punch for long lunches and arvo sipping.
Ingredients
30 mL Australian Gin (we suggest Papa Salt)
15 mL TANICA
10 mL fresh lemon juice
20 mL strawberry shrub
1 drop foamer
Champagne, to top
Method
Add all ingredients except Champagne to a shaker with ice.
Shake well until chilled and lightly frothy.
Strain into a flute glass.
Top with Champagne.
Garnish with a lemon twist.
